My Sweet Potato Cheesecake Squares

Good Afternoon Foodies!

Today I am bringing you a dessert that is just perfect for this season. We are finally hitting Fall and I couldn’t be any more excited. The original recipe for this can be found here.

I made a few changes like swapping out the ricotta and using cottage cheese instead. I used cinnamon graham crackers and added vanilla to the actual cheesecake mix.

This can be served with Cool Whip or any other whipped cream you want with these.

I can tell you they were a smash in my home. They survived 1 night and that was until my brother came over.

My Crunchy Fish Tacos

What it do foodies?

Today I am bringing you guys another taco recipe. I know a lot of you loved the Jerk Chicken Tacos I did last year. So why not share some of my favorite recipes and versions with you guys? These tacos I have made a few times. The recipe is inspired by a recipe I had used from the food network which can be found here.

My recipe has quite a few variations to it. For starters, I do not use Tilapia since it has been discovered that it really isn’t that good for you. In fact, it is a man-made fish and is chock full of carcinogens and chemicals. The other changes I make are with the mayonnaise, the sour cream, and cabbage. I use Vegan Mayonnaise because it is better for me and lactose-free sour cream or vegan sour cream since I am lactose intolerant.

This recipe wasn’t one of my favorites at first but then I had to do my own thing with it and now it is a staple in my house.

I love any and all types of tacos. But I do like how incredibly light these are and how they don’t bother my stomach. I think I may try a variation with the sauce and add avocado to it.

My One-Pot Chicken Stir-Fry

Hey There Foodies!

Today I am bringing you one of my favorite recipes. Stir fry! Anyone who knows me personally knows how incredibly obsessed with these I was at one point. They are super quick and easy. They are perfect if you are coming home tired from work and need something wholesome but comforting.

Stir fries can be made with virtually anything. I happened to go with these ingredients, but you can go with whatever you happen to have on hand.

I remember my mother used to make these a lot when she was working. When we got our first wok it was the coolest thing ever…well at the time. It rusted and was used until it couldn’t do anything else without burning it.

Mami’s Carne Guisada (Beef Stew)

A few weeks ago, I shared a picture of a Carne Guisada my mother made. It was the best thing in the world. I think I was sick and it was the only thing I could keep down and actually taste. For those who don’t know what it is, it is Puerto Rican Beef Stew. It is different from the American Beef Stew because of the seasoning and the vegetables that go in it.

Carne Guisada is usually eaten with white rice or mofongo. I’ve eaten it with both and I love them equally. It is the ultimate comfort food. I always get super sleepy after eating this dish. I can definitely say that it is a staple in my home. When anyone is feeling down, a guisada is always what the doctor orders here. It is one of the many comfort foods I have grown to truly love over the years. It doesn’t have a lot of ingredients. You can throw everything in the pot and just leave it alone for a few hours on low. This makes for a much tender and chewier meat.
